
Stop Letting Your Oven Slow You Down
Ever feel like your kitchen is moving at a sprint, but your oven is just… strolling? It’s a classic headache. You slide a cold pizza into the oven, the temperature drops, and then you’re stuck waiting for the heat to climb back up. That recovery time is where your profit disappears. We handle this by using shortwave infrared (IR) lamps. Instead of trying to heat up all the air in the chamber, these lamps beam energy straight into the dough and toppings. It’s direct. It’s fast. It just works. These quartz-glass tubes don’t mess around. They hit full temperature in seconds, which means you can really tighten up your production rhythm. You can flip the heat on the second the pizza goes in and kill it the moment it’s done. No more guessing. No more burnt crusts with cold cheese in the middle. Now, the technical side is pretty simple, but you have to get it right. We usually go for high-wattage lamps to get that aggressive, top-down sear that makes a pizza look great. We use standard R7s connectors, so if a lamp pops, you just drop in a new one and keep moving. Just a heads-up: make sure your voltage (230V or 400V) matches your control board. And don’t try to cram too much wattage into a tiny tube—you’ll spike the heat density and fry the lamp. Also, check your vents. If the ambient heat has nowhere to go, your lamps won’t last long. Getting this onto your floor is easy. We wire them into a PID controller with a thermocouple. This gives you a “closed-loop” system, which is just a fancy way of saying the oven actually knows when to stop heating. It stops that annoying “overshoot” you get with cheap thermostats. The result? Every single pizza comes out the same, whether it’s the first one of the morning or the hundredth one during a Friday night rush.
