
Stop Waiting for Your Oven to Heat Up
Ever notice how standard convection ovens just… lag? You set the temp, the thermostat clicks, but you’re still sitting there waiting for the air to actually get hot enough to do the work. It’s a bottleneck. We decided to skip the middleman. Instead of heating the air and hoping it reaches your food, we use shortwave infrared lamps. They don’t mess around with air currents; they send energy straight to the target via electromagnetic radiation. It’s basically instant. We’re talking 0 to 300°C in a matter of seconds.
Why this actually works
Here is the secret: we use lamps with a really high wattage density. But the real magic is in the “shortwave” part. Unlike the heat you get from a typical emitter, shortwave IR actually sinks into the dough or pastry. It doesn’t just sear the outside. That means you don’t end up with a burnt crust and a raw center. Plus, you can toss your pre-heat cycle in the trash.
The nitty-gritty on the gear
We build these with high-purity quartz glass and fill them with halogen gas. Why? Because the halogen cycle stops the filament from evaporating. It keeps the lamps alive much longer, even if you’re switching them on and off all day. As for the setup, we use R7s or SK15 connectors. They’re designed to be drop-in replacements for most industrial bakery rigs. You won’t need to spend your afternoon hunting for custom adapters or rewiring your whole shop.
A few things to watch out for
Now, this much power isn’t free. When you hit 300°C that fast, your oven housing is going to feel it. Metal expands when it gets hot—really hot. If your chassis isn’t built to handle that kind of thermal stress, it’ll warp over time. You also can’t use a lazy relay. You need a fast-acting PID controller. If the controller is too slow, the temperature will overshoot, and you’ll be staring at a tray of charred ruins. And one last tip: make sure your power supply is up for the task. There’s a significant current surge the moment these things ignite. But once you’ve got it dialed in? No more massive heating elements. No more wasted time.
